These amazing preserves are made in the north of Tasmania by Kate Smith Just Add Moonshine (JAM) from roadside fruit, excess produce from farms and the bounty of friends gardens. Kate is a writer and the names for her products are evocative and sometimes tongue in cheek. Her creativity spills over into the combination of tastes she magically combines, inspired by her walks with her familiar Mr Kipper.

The Essential is Kate’s crowning jewel and her greatest burden! She has created a savoury jam that is totally addictive, sweet and spicy, utterly scrummy. It is delicious with meats and cheeses but is also yummy with vegetarian or vegan delights. I’m partial to it with hummus and crackers.

Ingredients: brown onions from Scottsdale, olive oil, mustard seeds, sugar, sweet chilli sauce, red wine vinegar
