These amazing preserves are made in the north of Tasmania by Kate Smith Just Add Moonshine (JAM) from roadside fruit, excess produce from farms and the bounty of friends gardens. Kate is a writer and the names for her products are evocative and sometimes tongue in cheek. Her creativity spills over into the combination of tastes she magically combines, inspired by her walks with her familiar Mr Kipper.
Proud Amazons apricot jam spiked with cardamom for warmth. I do love a good apricot jam with salty butter on freshly toasted bread.
Ingredients: Moorpark apricots picked by Carol @Evandale, sugar, cumquats @ Riverside, lemon juice and cardamom
New 395gm jar.
