These amazing preserves are made in the north of Tasmania by Kate Smith Just Add Moonshine (JAM) from roadside fruit, excess produce from farms and the bounty of friends gardens. Kate is a writer and the names for her products are evocative and sometimes tongue in cheek. Her creativity spills over into the combination of tastes she magically combines, inspired by her walks with her familiar Mr Kipper.

Tanta Jospehine is one of Kate’s most popular jams, made from blood plums from Riverview at Evandale, 70% chocolate and a dash of fennel seed. Have it on toast with good salty butter, layered with toasted cheese or fill a sponge cake.

Ingredients: Blood plums from Riverview at Evandale, sugar, 70% chocolate, fennel seed and eureka lemon juice.
